When a big event is over in my life I tend to feel a little sad. Especially one that I devoted a lot of time and energy to for many months prior. ESPECIALLY one that I enjoyed so much as it was happening. Sometimes after an event where I feel so ‘present’ and ‘in the moment’ afterwards I feel a bit out of sorts…or out of time…directionless?
I knew that was a possibility for after hike so I purposely came up with a list of things to do and look forward to and smaller things to keep myself busy while I adjusted my thinking on to the next goal.
Summer hours at work coincided with this adjustment period and it’s given me a few days off to enjoy the first beach days, first bbq’s and the return of the farmers markets! Some of the things on my summer plan include:
- Take a writing course (already begun! woot woot!)
- Take a road trip (maybe a mini one tomorrow?)
- plan some 5K’s with my girls
- And cook!
I’ve already started with the cooking. Because of my kooky summer hours my pay drastically decreases over the summer – so cooking at home becomes paramount. I enjoy it too, but during the last couple semesters slipped out of the kitchen one too many times crying, “too tired!”
First on the agenda: homemade peanut butter. (have you made this before? soooo easy):
First, Dump a bunch of peanuts into your food processor. Just peanuts, nothing else.
Second: Turn your food processor on.
As the peanuts breakdown they release their natural oils and that creates the ‘butter’
Third: keep it going until you reach the consistency you like (I like mine kinda crunchy
Mine goes in a mason jar. Then it goes in my belly.
